Epic is privileged to claim Moody Tongue as a real partnership, working with them and architect K2 Studio on two Chicago locations from start to finish. We’ve loved seeing their growth … from the first budget-sensitive brewery build-out on South Peoria, to the second location on S. Wabash, recently garnering two Michelin stars!

Every brewery starts somewhere, and Moody Tongue is no different. The build-out and operational launch of the original 10,000 SF location developed into a solid 20-barrel brew house, complete with 40 barrel fermenters and bright tanks … all within the old Cadillac Glass Factory in Pilsen East (we think this is super cool). New floors, drainage system, and all new mechanicals was only the tip of the iceberg. This fully-functioning space produced and sold their now-famous, culinary beer, and we continued to consult with Jared and Jeremy, assisting throughout their production and operation processes. Eventually, we entered into Phase 2 at this location – the build-out of a tasting room for patrons and their tastebuds to enjoy.

And then there’s the NEW location … wow! Those well-earned two Michelin stars really “take the brew” in this sophisticated, elegant, and exquisite brewery and restaurant. Moving from the much-loved original location, Epic’s team continued to work with the Moody Tongue team and K2 Studio, and we created an entirely new experience in this 4,350 SF space on S. Wabash. Layered in two phases, the production brewery was completed in 2019, and the trail-blazing restaurant was served up later that year. Tanks and equipment were transferred from the original space and rooftop, while complete renovations included the shiny new second-floor kitchen, new tap room with existing bar, dining area and server bar, and dishwashing room. A sophisticated fireplace with artisan flair gives warmth in the classy second-floor dining area. The beautiful atmosphere in this new location really speaks to the relationships they have built with their patrons, and the love they have for creating delicious brews and culinary masterpieces.

SCOPE

South Peoria Location

  • 20-barrel brew house, 40 barrel fermenters and bright tanks, flooring, drainage system, mechanicals, HVAC, electrical, plumbing, tasting room addition

South Wabash Location:

  • Expanded brewery production facility, full-service restaurant

  • Rig, transport, and install all existing brewery tanks and equipment to new facility

  • Excavation, concrete pour, cementitious urethane floor system for new tanks

  • Assemble brewhouse, steam and glycol piping, electrical, plumbing

  • Second floor kitchen, new tap room with existing bar, dining area with server bar, dishwashing room, 2nd-floor fireplace, dining area, closet, coat room, walk-in cooler, millwork reception desk

  • Hardwood flooring, stained wood paneling on the first and 2nd levels, stained concrete, masonry, lighting, aluminum and glass entry door, tiling and finishing work

  • Sprinkler lines and mechanical, electrical, and plumbing work, including the installation of kitchen and bar equipment and new lighting throughout
